Ingredients
- Thotakura (Amaranth leaves/Chawli/Rajgira Patta): 1 bunch
- Green Chillies: 2
- Besan (gram flour): 2-3 tbsp
- Onion: 1, finely chopped
- A few curry leaves
- Tomato: 1, finely chopped
- Turmeric powder: ½ tsp
- Garam masala: ½ tsp (divided)
- Salt to taste
- Oil, for frying
- Water: 2–3 tbsp
Method:
- Boil and Prepare the Paste:
- Wash the Thotakura leaves thoroughly.
- Boil the leaves along with 2 green chillies for 5–6 minutes.
- Blend the boiled leaves and chillies into a thick paste.
- Add salt and 1/2 tsp garam masala to the paste, mixing well.
- Make the Batter:
- Gradually mix 2–3 tbsp besan into the paste until it reaches a thick, cake-like batter consistency.
- Steam and Cube:
- Pour the batter into a greased steaming dish.
- Steam the batter for 14–15 minutes.
- Allow the steamed batter to cool completely before cutting it into square cubes. For softer cubes, refrigerate briefly before cutting.
- Fry the Cubes:
- Heat a little oil in a pan and stir-fry the cubes until golden brown. This step enhances the earthy, umami flavour of the dish.
- Prepare the Base:
- In a separate pan, heat oil and sauté the chopped onions, curry leaves, and green chillies until aromatic.
- Add the chopped tomatoes and cook until soft.
- Stir in turmeric powder, the remaining garam masala, and a pinch of salt.
- Add 2–3 tbsp water to create a slightly thick gravy.
- Combine and Finish:
- Add the fried Thotakura cubes to the prepared base and stir gently.
- Cover and let the mixture cook for a minute, allowing the flavours to meld.
- Adjust salt and seasoning to taste.
- Serve:
- Thotakura Fry is ready to serve! Enjoy it with dal chawal, roti, or even as a delicious filling for wraps and sandwiches.
