The Rajasthani Lehsun Chutney, is an explosion of flavour crafted from ingredients native to the rural regions of Rajasthan. Over time, the recipe has evolved and seamlessly integrated into urban kitchens.
Lehsun chutney and dal baati share an unbreakable bond. The days spent in a joint family, eating together, indulging in dal baati generously topped with this rustic chutney on Sundays, is my fondest memory.
Lehsun Ki Chutney
Ingredients
- Garlic Cloves: 10-12
- Desi Ghee: 1 tbsp
- Cumin Seeds: ¼ tsp
- Turmeric Powder: ⅓ tsp
- Coriander Powder: 1 tsp
- Red Chilli Powder (Deggi Mirch): 2 tsp
- Dry Mango Powder: ¼ tsp
- Salt to Taste
Method:
- Mince the Garlic Cloves.
- To a bowl, add the minced garlic with all the spices then add enough water to make a thin slurry.
- Heat a pan, add ghee and cumin seeds, then the slurry.
- Cook this mixture until the masalas are cooked and the ghee is separated.
