Bhaji Ambat
Ingredients
- Red amaranth leaves: 1 large bunch, thoroughly washed and roughly chopped (including tender stalks)
- Freshly grated coconut: ½ cup
- Red chilies: 4 dried
- Tamarind: a small piece
- Cooked toor dal (pigeon pea lentils): ½ cup
- Onions: 2 medium, finely chopped
- Salt to taste
- Oil: 2 tbsp
Method:
- Prepare the Amaranth: Place the chopped red amaranth leaves in a pot with a little water and a pinch of salt. Cook until the leaves become tender. Set aside.
- Make the Masala Paste: Grind the freshly grated coconut, dried red chilies, and tamarind into a smooth paste using a small amount of water.
- Combine and Cook: Add the coconut paste and the cooked toor dal to the tender amaranth leaves. Stir well, and adjust the salt as needed. Allow the curry to come to a gentle boil, letting all the flavors meld together.
- Prepare the Onion Garnish: Meanwhile, heat oil in a small pan. Add the finely chopped onions and sauté until they turn golden brown. Add the roasted onions to the curry, mixing well to infuse their rich caramelized flavor.
- Serve: Serve Bhaji Ambat hot, paired with freshly steamed rice and an array of simple sides for a wholesome and nourishing meal.
