Bhapa Doi is a classic Bengali dessert made from steamed yogurt, often delicately infused with cardamom and sweetened with either jaggery or sugar. Creamy, slightly tangy, and perfectly balanced in sweetness, it serves as the perfect finale to any meal. Here, I have added saffron to enhance its appearance and lend a touch of warmth.

Ingredients
- Hung curd: 1 cup (250 grams)
- Thick cream: 1 cup
- Condensed milk: ½ cup
- Cardamom powder: ½ tsp
- Saffron strands: Few
- Milk: 1 tsp
- Pistachio and silver warq: for garnishing
Method:
- Begin by preparing hung curd. Strain the curd to remove excess water, creating thick hung curd.
- In a mixing bowl, combine the hung curd, thick cream, condensed milk, and cardamom powder. Mix thoroughly until the mixture is smooth and free of lumps.
- In a small bowl, mix the saffron strands with milk and allow them to infuse. Add the saffron milk to the curd mixture and whisk until well incorporated.
- Pour the mixture into earthen bowls (or aluminum bowls if earthen bowls are unavailable). Cover each bowl with aluminum foil.
- In a deep kadhai, add water and cover to allow steam to generate for 5-8 minutes. Place a stand inside the kadhai, arrange the covered bowls on the stand, cover with a lid, and steam for 20 minutes. Once steamed, refrigerate for 3-4 hours.
- Before serving, garnish with pistachios, silver warq, and a few saffron strands. Serve chilled and enjoy.
