Today I am sharing my Aaji’s treasured recipe for Chirote – a Marathi dessert specially prepared during diwali celebrations. It is a flaky, layered, deep-fried pastry, dusted with a dash of icing sugar.
Aaji would artfully place the coloured layers between the white. As the chirote were fried, it was delightful to watch the crispy and light layers bloom like flowers in the hot oil.”
On Maharashtra Day, let us savour the delicate pleats of this sweet symphony of tradition. Each flaky layer of this stunning dish unfolds just like our love for the rich Marathi heritage and its vibrant tapestry.

Chirote
Ingredients
- Plain Flour : 1½ cup
- Ghee : 2 tbsp
- Water : ½ cup
- Salt to taste
- Food colour of your choice
For Satha:
- Ghee : 2 tbsp
- Corn starch : 2 tbsp
- Oil for frying
- Icing sugar
Method:
- In a bowl, add Flour, salt and melted ghee. Mix it well.
- Add water slowly and make a soft dough.
- Divide the dough into similar portions according to the number of colours you are adding.
- Put all the colours individually, mix them and set aside for half an hour.
- Take a bowl to make Satha. Add melted ghee and corn starch and mix it well.
- Divide the coloured balls into 3 different balls and keep them aside.
- Start with one colour, roll all the small balls as thin as possible.
- Then take one sheet and spread the Satha mixture on the surface and place another sheet on it.
- Similarly apply Satha and place other layers. Do not apply Satha on the last one.
- Repeat it with All the colours.
- Take the innermost colour, first apply the Satha on its surface and roll the sheet tightly.
- Take the second coloured layer, apply Satha and place the innermost colour roll at the edge and roll it again tightly.
- Similarly repeat the process and roll all the colours.
- Take the roll and roll it out by hand.
- Cut it into 1 inch pieces.
- Take the piece and roll it thick using a rolling pin.
- When the oil is hot, fry them individually.
- Keep stirring the oil and fry them well.
Dust icing powdered sugar and serve the Chirote!
